Have you ever had one those weeks where each one of your meals seem to be on point? Even though most of of them have been either at my cousin’s place, a restaurant or at the cinema, I’ve managed to sneak in a few delicious ones at home too. Hopefully sharing them can be a source of inspiration if you’re in a meal rut and/or looking for new meal ideas. Quite a few of them are based on old recipes & what I had on hand at home.
Chocolate-Strawberry-Banana-Oat Smoothie:
You know a smoothie combination is a good one when it’s been made on repeat for the past 2 weeks. This mason jar is filled with 1 cup of unsweetened almond milk combined with a frozen banana, frozen strawberries, 1 scoop vanilla Sunwarrior Warrior Blend, ¼ cup raw oats, ½ tablespoon unsweetened cocoa powder & a pinch of xanthan gum….love it! My Sunwarrior stash is officially finito…just in time for my new packet that arrives tomorrow :).
Scrambled Egg Burrito…eaten open-faced because I went ham with the fillings:
This was stuffed (literally) with scrambled eggs, steamed spinach, sautéed mushrooms, salsa & mashed avocado. I normally make my wraps at home with wheat flour but I tried a 50/50 combination of corn flour & wheat flour this time round, using the same method as my Oat Flatbreads. The end result tasted great, and the texture is softer than when I use oat flour.
This Red Curried Soba Noodle & Tofu Bowl was a nice dinner to celebrate Meatless Monday:
It’s based on my recipe for Red Curried Brown Rice Stir Fry, but with noodles instead of brown rice & bok choy instead of peppers. I also increased the broth amount to ½ cup so that it was more of a noodle soup.
Daal & Brown rice with Grilled Okra:
Given how basic this meal is in most Indian homes, it’s almost laughable that I’m bothering to feature it. I mentioned in an earlier post that one of the perks of living in Mumbai is having an extra set of hands in the kitchen and this dish is an example of that. I’ll need to sit with our cook one day soon to write down the recipe to share…you guys would love it!
Unfortunately I realised it was Pancake Tuesday too late in the day and then I already had plans for dinner. Ah well- I will be sure to do batter next year!

All your food looks delicious!! Especially the “Red Curried Soba Noodle & Tofu Bowl”! I have been really into Asian- inspired meals lately.
This week I made a delicious stir-fry with udon noodles, teriyaki sauce and pak choi, which I ate with broiled salmon. I also made some sticky rice with chicken, leeks, mushrooms and Indonesian sweet soy sauce. But the highlight was a crèpe that I ate on Tuesday (mardi gras). It had spinach, goat’s cheese and marinated grilled eggplant slices. It was so good, I need to recreate it at home!
Oh, and I have also been enjoying a few pieces of old-fashioned fudge as dessert after dinner. It’s a nice change from my usual dark chocolate!

Haha – I forgot about pancake Tuesday too – so I need to “do batter” myself 🙂
That corn/wheat tortilla fascinates me – it sounds ah-mazing – even with those fillings “hamming” it up! And what’s those orange chunks in your daal dish?
As for my recent memorable eats – well, I just finished off my batch of mocha breakfast cookies – anything that has coffee, chocolate and oats is pretty much my idea of tastebud bliss!
The orange bits are carrots- you can never have too many veggies ;)! Cookies for breakfast is always a good idea, especially when chocolate is involved ;)!
Maybe it’s because I’m on a hardcore diet this week to make weight, but everything looks amazing!! The Breakfast Club were doing a challenge on Tuesday where if you ate 12 pancakes in 12 minutes, you got them for free. I would have absolutely destroyed that if I hadn’t been dieting! I had to look at their IG feed all day in jealousy 🙁

Oh wow, you have your own chef cooking for your family in Mumbai?
Call it basic dish but – at least in my opinion – a good daal is well worth mentioning. There’s daal and there’s oh-my-goodness-I-don’t-want-stop-eating daal. One of my uncles – while not Indian he spent a lot of time over there – prepares a mean dal but we don’t meet often enough so I could request it again soon. Oh well, one day.
Yes…although it’s quite common to have cooks at home. Looks like it is time for you to pay your uncle a visit ;)!

Teach me your ways to make smoothies look good- I’ve been trying to shoot a recipe but failing miserably. So bad. Daal is one of my all time favourite Indian foods- I should steal my mum’s recipe- It’s so good! Best thing I’ve eaten- The final 3 reese’s chocolate bars from America. So sad.

That smoothie is calling my name. I know it’s technically the middle of winter and I should be eating warm and hearty breakfasts, but I can’t step away from my smoothies… usually multiple times a day. There’s just something so satisfying about how cool and creamy they are, and the fact that they taste like dessert doesn’t hurt either 😉
Chocolate for breakfast? Don’t mind if I do….it really does taste like a chocolate shake for brekkie :)!
You know I love those eggs wraps. They’re a fan favorite in my house, and of course the smoothies. I’ve actually been ramping them up lately. I add some granola and yogurt and swapped the juice for almond milk. Not too shabby if I do say myself. In yesterday’s smoothie I skipped the fruit and went with peanut butter, bananas, dates, cocoa powder, sliced almonds and spinach. It was fantastic. One of the Hubby’s favorites which is no surprise since he loves PB and chocolate. Then again, who doesn’t.
Ohh ow- I’m loving the sound of your latest smoothie…obvi it’s right up my alley 😉
