Chicken Shawarma Tartine

Hey guys!  I had planned to write up a workout post for today, but that topic instantly got put on the backburner right after my lunch on Wednesday: Chicken Shawarma Tartine.   When I Whatsapped my sister about it, her reply was “All your meals sound so fancy”.  I’ll let you in on a secret- a majority of my meals are extremely basic, I’m just good with my words ;)!  I’m not a trained chef nor do I want to spend hours in the kitchen regularly.  I just really enjoy good food  & so need to find a way to make it as efficiently as possibly.  

Chicken Shawarma Tartine

Sure you can call this a ‘Chicken & Hummus Open-Faced Sandwich’, but how much more appetizing does a Chicken Shawarma Tartine sound…I thought so! If we exclude marinating time, this lunch literally comes together in less than 10 minutes…i.e.  the maximum amount of time anyone wants to be spending on lunch on a weekday.  And for my vegan friends- simply replace the chicken with tofu :).

Ingredients
  1. 1 medium breast of chicken
  2. 1 teaspoon extra virgin olive oil
  3. ½ teaspoon sumac powder
  4. 1/8th teaspoon cinnamon
  5. 2 tablespoons thinly sliced onions
  6. Handful of finely chopped, fresh parsley
  7. 1 teaspoon lemon juice
  8. 2 slices toast (I used rye)
  9. 2 generous tablespoons of hummus
Instructions
  1. Cut chicken into strips & add to a large bowl. Mix in olive oil, sumac powder, cinnamon, onions, parsley & lemon juice. Combine well & marinate for at least 30 minutes.
  2. Place a non-stick skillet over medium-high heat & sauté chicken until cooked, about 4-5 minutes.
  3. Spread hummus across both slices of toast & top with chicken & onions.
Notes
  1. i) If you don't find sumac powder in your supermarket's spice section, check the 'Ethnic Foods' aisle
  2. ii) For a vegan alternative, replace chicken with tofu

Total party in my mouth! Oh and I’ll let you in on one more secret: those 3 pepper rings on the side were definitely accompanied by a mah-oosive bowl of grilled mushrooms & zucchini…they just weren’t pretty enough to photograph ;)!

Oh heck yeah – “chicken shawarma tartine” sounds so so much better!! 🙂
I just googled Sumac Powder – had never heard of it before – thanks Khushboo! I gotta find it – it’s “tart” apparently?
Hmmm…best thing I ate for lunch last week …hmmm…I wasn’tmuch of a lunch person last week …so, does a slice of Dairy Free, no bake, cashew chocolate cheesecake count?

Oh the naming game… I swear that figuring out what to CALL a recipe is sometimes more complicated than coming up with the actual recipe. And it’s sad but I honestly can’t remember what I had for lunch last week. Either I’m getting old or it wasn’t anything special. A sandwich like this, though, I would -definitely- remember.

Lol you should work for a restaurant or food company naming their dishes/products! Is that a thing? I heard that there is a person at OPI whose job is to name their nail polishes, so I feel like there must be similar jobs in the food world.

Oh geez I don’t even remember what I ate last week! Wait I think I had leftover corn risotto one day, and that was pretty delicious.

Lol you fancy!! That does look/ sound incredible. And next time show those grilled mushrooms bc they’re pretty much my favorite thing ever. best thing i ate for lunch last week was green curry w/ tofu. super yummy!
