Happy April Fools Guy…any tricks up your sleeve? Although I don’t have anything devious planned, I should probably watch my back. Last year I sweetly offered to make my mom a cup of coffee because it was “the least I could do for her”. After adding in the milk, I poured in a generous teaspoon of salt. I may have channeled my inner 5-year-old but just thinking about it still makes me laugh. Her facial expression was priceless to say the least.
I also seemed to have channeled the younger me over the weekend…food-wise. While growing up in Lagos my sister & I had an obsession with Cinnamon Toast. If we weren’t downing bowls worth of Cinnamon Toast Crunch cereal, chances are we ate it in bread form. I opted for the latter this time round:
Although it’s essentially rye toast with butter, cinnamon & honey, I love how much nostalgic value certain foods carry. It tasted as delicious as I remember. The other piece of toast involves a current favorite: peanut butter, banana slices & chunky applesauce.
I also dusted off the waffle maker after months. I went through a phase of making waffles for breakfast daily but then got bored. I’m pretty sure the waffle maker is going to be getting more action now, especially as the batter recipe is so quick & easy to whip up:
- ½ cup oats
- 3 egg whites, whisked well
- Cinnamon
- Vanilla extract
Pour ingredients in a bowl and combine well
If you don’t have a waffle maker, consider the above a recipe for pancake batter 😉
And finally, I brought back a savory old favorite: Yummus Hummus Burgers. If you couldn’t tell from the title, these are YUM! Delicious or not, nothing says “Peace out” like a long ingredient list or complicated instructions. Fortunately these chickpea burgers are super easy to whip up, to the extent that I actually remembered the recipe without needing to refer back to my original post. If you’re a hummus fan, make these! If you’re not a hummus fan, what’s wrong with you? 😀

I used to love cinnamon toast growing up except mine was butter (of course) and then a mixture of cinnamon and sugar. We actually had a whole jar full of this mixture because both my brothers and I would pour in on our toast everyday.
Favorite waffle topping, I rarely eat them (because eggs rock my world), but it would have to be something with fruit and maple syrup. A berry compote sounds pretty delicious.
I think your burgers sound awesome, but I happen to love hummus.
Mmm I bet that sugar mixture would be fab in coffee too!
There’s definitely something to be said about the simple combination of bread, butter, cinnamon, and honey. As much as I enjoy getting creative with my eats sometimes, it never fails to surprise me how the simple things can often the the best. Hat being said, I’d have to say that my favorite waffle toppings are definitely maple syrup and butter. Classics never die 🙂
As for best food I ate this weekend, that’s kind of a tough one since it was Easter and all, so I’m gonna cheat and say… Easter food 🙂 happy April, Khushboo!

Funny that you mention Cinnamon Toast Crunch! Vishnu’s little cousins stayed at our place this weekend and that is all they would eat…literally!

Cinnamon toast is fantastic, both in the cereal and bread form :-p I remember whenever I was a kid and I was sick, I would always request cinnamon toast. And as I got older…it became my go-to hangover remedy :-p
I love hummus. And anything in burger form. So basically I should really make those :-p

Waffles look yum..I have started loving oatmeals–the overnight one as they keep me full and they are certainly the highlight of my weekend!

Ahh, I got a good laugh out of the April Fool’s trick you played on your mom last year! April Fool’s Day was *always* celebrated in my house when I was growing up. My mom played several tricks on my brother and me each year, but my absolute favorite was the time she set our clocks forward a few hours, woke us up in panic, claiming she’d over-slept and that we were late to school, packed up our things, and then drove us to our favorite restaurant for breakfast. We were young enough that we weren’t wearing watches yet, so we totally bought it! It was such a fun morning, and we got to eat pancakes, eggs, bacon on a school day–which was rare!
Cinnamon toast invokes childhood nostalgia for me, too. Come to think of it, I haven’t made it in a long time…That needs to happen soon! I love your waffle recipe as well; I’ll have to try that when I’m home, as I don’t have a waffle maker in DC.
The best thing I ate over the weekend was probably bites of Nutella straight from the jar. 😉

oh my, that waffle looks soooooooooo good. i don’t own a waffle maker, maybe one day when i have more kitchen space. that is hilarious what you did to your mom. so funny! best thing i ate was my coconut cake (yeah i’m not modest), salmon, those greek spinach triangle things.. spani.. something. 🙂

Spanikopita- I love them too! Best thing I ate was a beautiful piece of snapper(fish) with lemon looking at the ocean. Would you believe I’ve never eaten a waffle- something I shall have to remedy 🙂

Cinnamon toast is most definitely a childhood favorite of mine. Two pieces of white bread, melted butter on both and then a crap ton of cinnamon and sugar piled on… had to be the correct cinnamon to sugar ratio too! Too much of one of them, especially the cinnamon, was just not okay 😉

Love cinnamon toast crunch, actually anything that has cinnamon on it. Going to have to recreate it on toast tomorrow morning. So jealous you get to have those waffles – missing having them for breakfast. Favorite topping has to be greek yogurt mixed with jam topped with strawberries and roasted almonds.
