Another week gone by, another Thursday is upon us which means YOU get a look into MY lunchbox….or as we established last week, my ‘reused plastic bag’. I’d like to think of this lunch as a perfect example of making the most of leftovers:
Enough small chat, here are the goods:
- A
rainbowMixed Salad
topped with…
- Mexican Bean Dip
Pinto chili by night, bean dip by day. Rather than heat up leftovers from the night before, I mixed it with Greek yogurt and BAM- a whole new meal. I swear it tasted WAY better than it looks….and made for an excellent salad topper:
- Melba toast for a crunch
- A Mini Toblerone to round things off
Gotta love multipacks of chocolate sold in Duty Free 😉
**For those who missed my tips for packing lunches, you can take a look at them here**
What was the best thing you ate for lunch this week?
