For the longest time, I tried to convince myself that I didn’t like cheese. Call me crazy but avoiding it completely seemed a lot easier than limiting myself to a miniscule portion. The two cheeses which I stuck to having were cottage cheese and Philly Extra Light (or Laughing Cow Light triangles). After recently being re-acquainted with Cheese (note that I’ve made it a proper noun 😀), I realized that I’ve been missing out. Damn, that dairy is good! When I was in Dubai a few weeks ago, my aunt had this platter of cheese that she would put out during every meal. After making up for lost time indulging in parmesan for 7 days straight, my palates have refined themselves. Let’s just say, Kraft’s parmesan in a bottle has lost its appeal.
My latest find is Boursin Light, garlic and herb flavor. Philly might be good but this is the mac daddy of spreadable cheeses. It’s so creamy and flavorful, and only has 40 calories per serving (trust me, this serving size is more than generous). When it comes to regular cheese, it’s not something I will have on a regular basis. Because it’s fairly calorie-dense (and delicious), it’s so easy to go overboard with it. As for the Boursin Light, I’m going to go wild with it: pasta sauce, sandwich filler, crudité dip- it is ON! Good news for the vegetarians: the ‘light’ version has a higher protein content than the ‘regular’ due to whey protein concentrate being an added ingredient. And hey, you gotta meet your Vitamin A and calcium requirements somehow ;)!
