Good morning…or afternoon if you’re on this side of the pond!  My former greeting seems to be a tad bit more appropriate given the subject of this post: Banana Bread Oatmeal

I mentioned it was the start of swimming season in Mumbai last week, but clearly I spoke too soon.  It started raining on Saturday which is so uncharacteristic for India this time of the year.  As a result it’s been freezing over here.  Okay not so much freezing as in “I don’t care how ugly they are, but I need to wear my Uggs” but more like “Let’s just watch movies & eat comfort food all day” kinda freezing.  This sudden change in weather had me craving only one breakfast when I woke up yesterday morning: a cozy bowl of stovetop oatmeal.

It had been a long while since I cooked oatmeal & I forgot how much I enjoyed it.  It’s definitely back on my breakfast rota, at least at least until the weather heats up again.  I went with my no-fail cooking method that always yields a creamy bowl of oatmeal that tastes like banana bread & packs in so much nutrition – it’s pretty much outta control ;).  If you guys haven’t tried adding chia seeds to your oatmeal, starting doing so NOW!  Those anti-inflammatory lil suckers add so much volume & creaminess.  Although egg whites in oatmeal might sound weird at first, they are a killer oatmeal addition.  Along with amping up the protein content, egg whites help create so much fluffiness!  Consider this bowl of Banana Bread Oatmeal as your blank canvas & go crazy with the toppings- I rolled with more banana slices & toasted almond flakes yesterday

  1. I’ve been eating oatmeal like it’s my job! It has been such a cold winter that oatmeal has been my go to breakfast Monday-Friday – of course, my toppings are peanut butter and chocolate πŸ˜‰
    I so gotta try your version -I add chia seeds to mine – but only as a topping – so intrigued by this version where its all cooked together! Thanks for sharing lady and Happy Monday – hope the sun comes out soon!

  2. I LOVE oatmeal and it’s definitely my go-to breakfast when it’s cold outside. Lately I have been loving cottage cheese in my oats, but bananas, chocolate protein powder and canned pumpkin are also really good. The most important far for me is the topping though: always nut butter!

    1. I need to try adding protein powder to my oatmeal – do you had it during cooking or stir it in after it’s cooked?

  3. My body is completely confused when it comes to breakfast foods. I was eating oatmeal in the summer, and then I started drinking smoothies when the weather turned nasty πŸ˜† Ahhh well. Bananas and egg whites are probably two of my favourite additions to oats, though. Oh! And coconut flour, too. I’m completely smitten with how doughy it makes them. Aaaand now you’ve given me an oat craving πŸ˜›

    1. How much coconut flour do you add to a bowl of oatmeal? I have some in my pantry so will definitely try it out

  4. I’ve been having oatmeal once a week and loving the treat (any more than once a week and my stomach hates me!). I have it with fruit and honey, brown sugar or Dark Chocolate Dreams peanut butter. Mmmm.

  5. I have NEVER had banana bread before in my LIFE but my old roommate made like 10 loaves one day, so funny! Banana bread for DAYYYSSSS, no MONTHS! I even gave a loaf to the cable guy! ha ha ha ah!
