My Big Fat Greek Frittata

Hey guys!  What’s going on?  Maybe it’s the change of weather that has me craving more cooked food over salads, but lately I’ve been getting more experimental in the kitchen. I’m still resorting to old favorites, but it’s a pleasant change to have new meals thrown into the rota.  While I’m no Nigella Lawson (yet), expect some delicious & easy recipes coming your way!  I’m going to start off with a Greek Frittata I made for my sister a few weeks ago:

It was one of those nights where we came home and nothing was cooked. That only meant one thing: Winner, winner breakfast for dinner!  She already made herself comfortable on the sofa and I definitely didn’t want to spend more than 15 minutes in the kitchen.  Although cereal would have easily hit the spot, it’s not every month Shyamla comes to visit…nor did we have any cereal at home (blasphemy I know 😀 )!  Given we are both big egg fans, we settled with a frittata i.e. one of most underrated and versatile meals out there.

Brinner

Although omelets tend to be more popular, I actually find frittatas easier to make: no flipping is involved.  Ease aside, it’s the perfect way to kill a craving or get rid of leftovers: just throw in whatever meat, vegetable, cheese, and herbs you have on hand and let the skillet, stove and oven work their magic.  I went down the Mediterranean route & am ever so glad I did!

Greek Frittata – Serves 2

Ingredients

  • 3 whole eggs
  • 2 egg whites
  • ½  cup sliced peppers
  • ½ cup sliced mushrooms
  • ½ cup sliced onions
  • ¼ cup sliced kalamata olives
  • ¼ cup crumbled feta
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt & black pepper to taste

Method:

  1. Preheat oven to 180*C
  2. Combine eggs with salt, pepper, oregano and whisk until frothy.  Mix in the olives & keep aside
  3. Heat oil in a medium non-stick skilled over medium heat.  Add mushrooms, peppers, and onions.  Sauté until vegetables are tender and develop colour.
  4. Pour egg mixture over the vegetables and stir gently.
  5. Reduce heat, evenly sprinkle the feta and cook for 1 minute
  6. Place skillet into oven and grill frittata for 8-10 minutes, or until set
  7. Cut into wedges and serve

I love Greek flavors.  I love Brinner.  And most importantly, I love meals, which require close to no effort.  On that note, I think I know what’s for dinner tonight 🙂 …

  1. Khushboo the domestic goddess!! Looks like a fabulous frittata- I adore frittata, it’s perfect picnic food! I have never used egg whites with the whole eggs- interesting 🙂 does it give it a better texture? Oh I just love Nigella- I particularly love her “feast” cookbook- I had great success with her “valentines” feast- Lucas and I loved it! I feel so sad that her husband appears unstable and abusive- I hope she is getting the support and love she need right now! I also love my big fat Greek wedding- my dad quotes it all the time lol “you don’t eat no meat- it’s ok I make lamb” 🙂 xo Sophia

Ooh and at the moment my go to when cooking is too hard- vegemite, cheese, tomato and avocado on toast (a combination or all) or a sandwhich of those ingredients- always on baguette or ciabatta and if there’s no avocado- then there needs to be a lot of fresh butter! Eggs- I am Swiss- neutral- I believe in peace and love of all egg preparations 😉

  2. This looks amazing! I’ve never actually made a frittata, looks super easy – Usually my go to in NYC when I was there was a broccoli and mushroom omelette with a little parmesan – so good! My favourite no cook breakfast now is overnight oats, and when I don’t feel like cooking I make shrimp stirfry – lots of mushrooms, zucchini, corn and shrimp 🙂

  3. This looks great! I find frittatas a lot easier than omelettes too. And I love the Greek flavours in this one. 😀

    My go to meal when I don’t want to cook is usually a sandwich. Or if I’m feeling slightly motivated I’ll roast a sweet potato with broccoli and fry up a few eggs – it takes an hour, but it doesn’t involve much work at least!

Oh girl, you know I love me some breakfast for dinner 😀 The only thing is that my brinners usually involve cereal, whereas yours are all fancy 😛 And I know, I know – this meal had you spending hardly any time in the kitchen – but it looks amazing. It’s been way too long since I’ve had a frittata, and I LOVE the Greek flavours, so I’m definitely keeping this recipe in mind!

    1. Hahaha why thank you. It’s a pretty deceiving dish- i.e. looks much more time-consuming than it truly is ;)!

  5. That frittata looks fancy for only taking 15 minutes to whip up! Eggs are definitely one of my go-to quick, no effort meals. That or a yogurt bowl or grilled cheese 😉 I love the idea of the Greek flavours – I’d just have to sub the kalamata with black olives (the only olives I will eat) and I’m good to go!

  6. I looove simple recipes!! And Frittatas are definitely a great go to meal. I like my eggs as an omelett with some flaxseed, nutritional yeast and chicken, but also love the simple sunny side up.

      1. Yes, they get a little fluffier (especially when you let them sit with the eggs for a few minutes before cooking) and they hold together better!

  7. I just scarfed down two fired eggs for dinner mere moments ago. Easy, nutritious and delicious. Frittatas are awesome and totally underutilized. I love yours with the Greek twist. Too bad I didn’t read this before dinner.

  8. K – I can’t help but laugh when I read your post. I’m just thinking if your house help was home at the time, what must be his/her impression watching a 25 year old cook? Seriously, not too many people like that in India, that’s when you know you are imported.
    This Greek Frittata looks amazing, can’t believe it only took you 15, I would have spent like 30 minutes making it… winner!

  9. Oh.. go to meal when I can’t be bothered… maggie noodles ( I KNOW SO BAD )… peanut butter and jelly, sometimes with banana. Oatmeal.
    I love eggs frittata style… and sometimes omelettes too.

  10. You had me at no flipping involved 😉 Every time I go to flip an omelet (or sometimes even pancakes…) it ends up as a lump in the pan. I actually don’t know if I’ve made a frittata, but I think your recipe is a great excuse to give it a go. I mean, you can never go wrong with Greek/Mediterranean flavors! 🙂

  11. Breakfast for Dinner is my all time favorite event!
    I mean one Breakfast a day is good – but in my opinion two is always better.
    So Breakfast for Dinner usually happens if I don’t feel like cooking.

  12. Go to meal when I have no energy to cook and my appetite is raging? I pop a sweet potato in the microwave and top it with whatever sounds appetizing. 😛
