Lazy Girl Layered Dip

Que Pasa Amigos? While I wish my opening greeting to this post was a testament of the extraordinary linguistic skills I developed in the “Spanish for Beginners” class that I took in university, such is not the case. The only thing I seemed to have gotten out of it was a boost to my overall grade %.  However it is in line with the theme of this post: la comida Mexicana (Mexican food).

Although I can’t remember the last time I actually ate an authentic Mexican meal, there’s nothing stopping me from attempting to recreate a few dishes at home.  Of late, it seems to be one of the few cuisines which I constantly crave: fajita chicken & quinoa bowls, Waffizas, taco scrambled eggs, salsa as a salad topper…it doesn’t stop!  My latest favorite is a layered dip made from refried beans.

I promise it tastes way better than it looks!

Although fresh food is always touted as best, it’s impressive how much nutrition a can of refried beans packs away:

  • Good source of fiber:  1 cup can provide you with 90% of your daily requirements
  • Rich in protein: A serving provides 24g protein
  • Mineral overload: It contains various minerals including iron, manganese, magnesium and potassium

Anyhow back to this dip.  I’m going to go ahead and called it the Lazy Girl Layered Dip, given its simplicity:

It’s so easy that I feel like a cop-out even calling it a recipe, but it was too tasty not to share.  Plus it pairs excellently with margaritas….you know, in case you plan on celebrating Cinco De Mayo on Saturday ;)!  Just to note, I winged (wang/wung?) it with the ingredient quantities so use your discretion.  Here’s a general gist of it:

Lazy Girl Layered Dip

Ingredients

  • 1 can refried beans (I used a 435g of Old El Paso)
  • Greek yogurt
  • Salsa (again Old El Paso)
  • 2 teaspoons Cumin

Method

  1. Heat a can of refried beans with cumin powder stirred in.
  2. If the can has no added salt, add a pinch.
  3. Refrigerate beans until cool.
  4. In a glass dish, spoon in a layer of refried beans, salsa, and then Greek Yogurt.  Repeat until ingredients are over.
  5. Serve with your choice of scoopers such as raw veggie sticks or tortilla chips.

**Note: If you have avocado, mash some up with garlic & lemon juice and add in a layer.  Unfortunately I had none at home.

  1. I can seriously eat refried beans by the spoonful! Some may call that gross…I call it delicious! And my favorite Mexican dish would have to be bean and cheese enchiladas (the kind my mom makes are AMAZING)!

  2. Loooove Mexican food, and therefore love the lazy dip. Glad you mentioned the avocado – that’s exactly what I was thinking as I was reading. 🙂

    My favorite Mexican dish is anything spicy – chile rellanos, fajitas with jalapenos… and super spicy salsa with guac.

  3. looks so delicious. seriously good. i’ve never tried greek yogurt wtih mex food, but I will give it a go. my favorite mex dish… shredded chicken enchiladas in a verde sauce.. just thinking about it gets me so excited. and of course a margarita to go with it.

  4. Yummm!!! Oh Khusbhoo, you’ve got me craving Mexican food now. My favorite Mexican dish has to be nachos with extra sour cream and cheese.

  5. I’ve never had a layered dip but this sounds interesting! Plus anything with beans + cumin wins my vote. I love Mexican food but have been disappointed with restaurants since going vegan and don’t usually cook it myself, unless you count guacamole 🙂

    1. Funny u say that- I went to a Mexican restaurant on Thursday night and kept thinking how much better I could have made the meal at home! Not a fan of the excessive use of coriander at all!
