Cauliflower Crust Pizza

While I don’t think Adidas had pizza in mind when they come up with their Impossible is Nothing tagline, apparently the same goes.  A few weeks ago, I came across a recipe for a pizza crust which primarily contained three ingredients:

  1. Cauliflower
  2. Eggs
  3. Cheese

…That’s right, not a hint of flour.  I couldn’t decide whether I was intrigued, excited, or skeptical.   It’s a good thing I am easily persuaded because one look at the picture and it immediately found its way onto my ever-growing “To Make List”:

I know, I know: all you pizza connoisseurs are probably not buying it but I promise you that it tasted delicious.  I’m not going to lie and say it’s just like eating a flour pizza crust…because it’s not. But surprisingly, it’s not like eating cauliflower either.   It has its own charm and tastes very pizza-esque.

Whether you’re on a low-carb diet, seeking an innovative way to sneak some extra veggies into your diet, falling into a food rut or simply looking for a new recipe to dabble with, this is definitely worth a shot.  And for what it’s worth:

Cheese + Marinara sauce = Win

Cauliflower Crust Pizza –serves 1

Crust Ingredients

  • 1 cup grated raw cauliflower
  • 2 egg whites whisked
  • 2 tablespoons grated cheese (I used parmesan)
  • Your choice of herbs (I used parsley & oregano)
  • Salt to taste

Method

  • Preheat the oven to 200*C
  • Steam your grated cauliflower for 4-5 minutes.
  • Once steamed, pat dry the cauliflower to remove the excess water
  • In a separate bowl, combine the cauliflower with the egg whites, cheese, and herbs.  Mix well.
  • Spoon out the mixture on a non-stick pan (or parchment paper if you have) and spread the mixture out to form a circle.
  • Bake it in the oven for 25-30 minutes, turning it halfway through cooking time.
  • When ready, remove from oven and add on your toppings.
  • Place the pizza back in the oven for a few minutes and remove when the cheese has melted/browned

*Note: It’s prone to break so I would suggest eating it with a fork & knife .

    My absolute favorite pizza toppings are fresh mozzerella, basil, and tomatoes – can’t be beat!

  2. I have had one of these recipes pinned to try for weeks. I need to get on it! Yours looks fabulous. I love the addition of oregano to the crust.

    My favorite toppings: artichoke, spinach, feta, and roasted garlic.

  3. I was considering a cauliflower crust when I made a primal quiche the other day, but went almond meal instead as cauliflower crusts sounded too good to be true/possible. Glad you gave it a try, now I can be brave enough to attempt a vegan version in my own kitchen 😉

  4. This looks fab. I have cauliflower in my fridge which was bought for this very reason, but I haven’t made it yet. I am wanting to try making it with almond flour. Maybe it will hold better? I am not sure.

    1. I think adding in a bit of flour would definitely make it more pizza-ish and hold the whole thing together better! Whenever I make pizza crusts with oat flour and egg whites, it works a charm!

  6. oh man, that looks GOOD. i’m thinking the mushroom-egg-parmesan may not taste bad on it’s own, right? that’s a great treat. my favorites are mushroom and olives. I LOVE that combination! 🙂

  7. My sister often replaces rice with cauliflower, this looks like something I must try!
    I guess my concern would be… does it stay well together? I could see the crust falling apart easily even with the eggs in the ingredients.
    I love modifying recipes like this though, I may try this this weekend if I have time between studying 🙂

    1. I’ve heard about cauliflower rice but am yet to try it…as long as you have a good sauce/curry, I can imagine working out really well! To be honest, it doesn’t stay amazingly together so I would suggest using a fork & knife! Alternatively adding in some flour might give hold it together better!
