Brown paper bag: week 2

Another week gone by, another Thursday is upon us which means YOU get a look into MY lunchbox….or as we established last week,  my ‘reused plastic bag’ :lol:.  I’d like to think of this lunch as a perfect example of making the most of leftovers:

Enough small chat, here are the goods:

  • A rainbow Mixed Salad

topped with…

  • Mexican Bean Dip
Pinto chili by night, bean dip by day.  Rather than heat up leftovers from the night before, I mixed it with Greek yogurt and BAM- a whole new meal. I swear it tasted WAY better than it looks….and made for an excellent salad topper:
  • Melba toast for a crunch

  • A Mini Toblerone to round things off

Gotta love multipacks of chocolate sold in Duty Free 😉

  2. share the pinto chili/bean dip recipe. looks delish! my lunches are always so boring. a turkey sandwich on whole wheat pita w/ avocado, tofu cheese and jalepenos. and my snack is a 100 cal pack of popcorn.

  3. Oh yay I’m getting lots of good lunchbox ideas for when I go back to teaching in uni! Love your outlook – healthy living rocks! Best lunch – grilled egg,apple and strawberry jam wrap I think!
