Veggie Delite

One thing that gets on my nerves is when people suggest that vegetarians do not eat enough protein!  I agree that because several plant-based proteins like beans and legumes aren’t ‘complete’ proteins, it can be difficult for vegetarians to meet their daily requirements.  However foods like tofu can help eliminate such dangers. As it’s a soy-bean product, tofu is packed with protein: 100g contains 9g of protein!  

Apparently tofu is known as a ‘hippie food’ and ‘urban hippies’ eat organic foods and are most likely vegetarian.  That probably explains why merely eating tofu which makes me feel overly healthy.  For an idea just how nutritious it is, click here .

Although I love its liquid counterpart soy milk, I can’t say the same about tofu.  I like it but I’ll reserve using the L word for those foods which really warrant it (a.k.a oats, oats, oats! 😆 ).  To be honest, I can understand why most people hate on it.  My ‘beef’ with tofu is that it’s a double-edged sword. Because tofu is rather tasteless, it doesn’t really scream ‘Eat me!’  However because tofu naturally tastes so bland, it can miraculously take on the flavor of its surrounding ingredients. If anything, I suppose its versatility qualifies tofu as a more natural alternative to protein powders.  Check out 4 ways to incorporate it into your diet:

1) TLT: Tofu, Lettuce, Tomato

There was also some Boursin involved but “BTLT” just doesn’t have the same ring to it 🙂 !

2) The Proteinified PB & J:



Yes, I went there and it made for a delicious snack (multiple PB & J tofu bites were consumed ;)). Although bread was MIA in the picture, this combination definitely has sandwich potential. 

3) Salad Topper

Tofu & Chickpea Salad topped with Sesame Dressing.  Yes I ate it all!

4) Oatmeal

Stirring silken tofu into oatmeal is an easy way to boost the meal’s overall creaminess.

LOVE tofu! My favorite way to prep and eat it is to marinate in a yummy sauce and bake it…delish!
