Raw Vegan Chocolate Chip Cookie Dough Balls

As I confessed a while ago, there are some foods whose ingredient lists go right above my head.  What I don’t know can’t hurt, right? RIGHT?! Glad we’re on the same page :D!  Another one to add to the list is cookie dough.  Who cares if it contains margarine? Who cares if eating it raw puts me at risk of salmonella? Not me! It just tastes so.freaking.good!  If eating it is so wrong, I really don’t want to be right! 😉

After making a dent in a packet of the good stuff Nestle Toll House yesterday with my cousin (yes, we simultaneously watched the corresponding episode of F.R.I.E.N.D.S with Pheobe & Monica and yes, it was my idea), I had the urge to continue the cookie spree!  Given the low status of my snack bar stash, I wanted to bake wholesome cookies, specifically white chocolate & raisin Super-Charge Me cookies.  After seeing their ingredient list (oats, flax, flour, dried fruit, nut butter, etc), I was certain they would hold ideal snack potential.

Now where’s that recipe? Unfortunately it was a pretty epic fail: looked pretty, tasted like ____ (fill in the blank: it rhymes with ‘class’ :lol:)!  I don’t know what went wrong but I do know the following:

1) I am still cookie-less

2)Valuable peanut butter and Lindt went to waste

3) I still need to find a snack bar replacement.

Fortunately I DO have a tried & tested recipe for you: cookie dough balls. They’re as delicious as ‘Mrs Toll-House’ herself and as portable as a snack bar.  Don’t thank me, thank my friend Lisha :):

Raw Vegan Chocolate Chip Cookie Dough Balls

  • 2/3 c raw cashews
  • 1/3 c oats
  • 2 Tbsp Agave
  • 1 Tbsp Maple Syrup or Agave
  • 1 Tsp Vanilla Extract
  • 1/4 c Chocolate Chips

Put everything except the chocolate chips in a blender or food
processor. Once you have a batter, add chocolate chips and roll into
balls.

    Those look super yum-you know where I live now 🙂 My current go-to snack would be a handful of almonds+walnuts!
