Vegetable juice: the verdict

So, a week ago I had posted about my lack of energy levels and attempt to cure it with homemade vegetable juice.  I’ll give you the verdict in 2 words: magic potion. Mental or not, this juice has worked wonders.  I’ve been feeling so much full of life this past week, and haven’t experienced that mid-afternoon sluggishness at all.  Maybe it’s all in my head, but something is doing the trick so I’m not going to complain.   Technically, it is a mocktail but don’t be fooled into thinking you’re about to drink a yummy piña colada or something similar.  Although it’s been a week, I still do a little ‘yuck dance’ every time I finish my shot.  But fortunately, it becomes more bearable each day and it’s a small price to pay for the huge impact it has on me.  All you gotta do is put on your big girl panties and suck it up ;)!   And more than my energy levels, I’m convinced it works as a natural face moisturizer.  As four different people have commented on my complexion this past week alone, it must count for something.  Here’s what my version includes:

  • 1 carrot
  • ½ raw beetroot
  • Large handful of spinach
  • Large handful of celery

Chuck it all in a juicer to result in ½ cup of juice.

I’m sure any kind of vegetable combination will create similar benefits, but try and include at least one green vegetable.  In my opinion, beetroot is a must.  More than its health benefits, it does wonders for the juice’s overall taste by adding a hint of sweetness.  And if the taste of vegetable juice really doesn’t work for you, add in some fruit to help disguise the flavor somewhat.  I’ve been drinking it literally as soon as I wake up.  Now if that’s not a virtuous start to the day, I don’t know what is :D.

  1. Try adding some ginger to your juice – it adds a great kick!
    Or mixing in some cucumber & fennel – gives it a liquorice like twist..!
